Genmaicha
by Ahyoka Lee
Genmaicha (gen-my-cha) is a mixture of roasted brown rice grains and green tea. The rice can be popped or roasted. The tea itself offers an authentic nutty flavor with a combination of starch and natural sugar making it less acidic than other teas & containing less caffeine.
Delicate teas such as green, green Oolong & white teas use cooler water when steeping. Water that’s too hot will cause overly bitter & astringent taste.
Water that is too cool will cause tea to taste flavorless.
Rule of thumb : 2-3 minutes for light Oolong & green tea
