What are tannins?

Tannins are polyphenols compounds produced by plants as a natural defense against pests.

They are well known for their astringent, bitter flavors in plant-based foods & for giving beverages such as tea its dry, somewhat bitter flavor & providing color in certain types of color.

The Tea

Tannins contribute color and flavor to plant-based foods. They are known for their ability to easily bind with proteins and minerals —- hence the reason why they are used in “tanning” leather .
